First Install Windows and during the installation, create 3 partitions...

    1 > Windows
    2 > OS X
    3 > Ubuntu (Linux)

Install OS X on the Second Partition using Nawcom ModCD + Retail Snow Leopard DVD....

After the installation, boot again OS X using Nawcom ModCD, install the latest Chameleon and made the steps below...

Download this app > Chameleon Wizard - Downloads - OSx86.net

    Use a SMBios for a MacBook2,1 > SMBios_MacBook2.1.zip

Generate a "org.chameleon.Boot.plist" with the options that you will see here > Screen Shot 2011-12-31 at 11.46.04 AM.png

And run the OS X update like described below...

If you are using a Retail 10.6 DVD > First update to 10.6.3, reboot, boot again with ModCD, update to 10.6.8 and before reboot install legacy_kernel 10.6.8...

If you are using a Retail 10.6.3 DVD > Update to 10.6.8 and before reboot install legacy_kernel...

Reboot and try to boot from your HDD, if everything goes well, you now have a Dual Boot between Windows 7 and OS X...

Install Ubuntu on your Third partition but, during the boot loader setup, choose the target as the Ubuntu partition and not the HDD MBR...

If you made all the right steps, now you have a Triple Boot...
