There are many parts fully compatible right now, Sandy Bridge systems work superb on OS X. For a somewhat good overview what to buy I can recommend TonyMac's CustoMac build, which are decent computers on it's own. Important is that you choose exactly the same motherboard as listed there, because any little change in chipset can make the system not Hackintosh-ready!

Nowadays, there is no “guide”. It’s pretty much:
get the retail copy of the Mac OS X,
    get a “cd-boot”,
    get fakesmc.kext,
    get a dsdt pather,
get the necessary additional kexts (kernel extensions) (“drivers”) (if any need it)
    enjoy your hackintosh!

If you are interested in building a M(H)ac Pro (4,1 or 5,1), so that your system will be as compatible as possible, the 2 most important items to choose are the motherboard and the video card.
The most used motherboards to create a hackintosh, I think, they are the Gigabyte ones. The nVidia cards are also pretty much straight forward (only Graphics Enabler needed).
Make a configuration and then post the components here, and if adding or removing one is necessary, I’m sure the guys here will help you.

    Then,
    CPU – check
    Motherboard – check
GPU – check or you can choose 5770, cheaper

Since this are the important ones, the rest you can change as you wish. For:

Case – must have a power supply in accordance with the consumption of power and the ”room” (interior) must have enough space to accommodate the motherboard, video card and rest – middle tower and up

Optical Drive, Hard Disk – I can pick them for you, but I don’t know your “needs”; for example: I don’t really need the Optical Drive since I know how to install Mac OS X in different ways, including not needing a DVD-ROM; as for Hard Disk, the same, it is enough 250GB but it can go up to 1TB, it can be a regular SATA drive, but it can be a SSD drive as well...
